Peanut Butter Glazed Popcorn

This peanut butter popcorn recipe is super tasty. It tastes a little like caramel corn, but with a peanut buttery twist! Perfect for you peanut butter lovers out there!!!

Ingredients:
8 cups popped popcorn
1/2 c. butter or margarine
3/4 c. brown sugar
1/2 c. peanut butter
20 large marshmallows

Directions:
Preheat oven to 200 degrees F.

Pour popcorn into a large bowl or onto a nonstick jelly roll pan.

In a glass bowl, combine the margarine/butter, brown sugar, and marshmallows. Cook at 1 minute intervals in the microwave, stirring between each time, until the mixture is melted and smooth. Stir in the peanut butter until well blended. Pour the melted mixture over the popcorn, and stir quickly to coat the popcorn before the mixture cools.

Spread over two nonstick jelly roll pans (or if you don't have nonstick jelly roll pans, lay out a layer of foil in the bottom of the pan) and bake for 20 minutes. You can stir after 10 minutes to get more even coverage
Be careful not to boil mixture too much as peanut butter will burn. Remove from heat and stir in vanilla. Pour mixture over popcorn and stir accordingly. Spread evenly over pan.

Fantastically Chocolate Popcorn



This popcorn is cocoa-y and delicious if you are looking for a lighter tasting chocolate! It's crunchy and tasty and a great snack for your next movie night!

Ingredients:
2 quarts popped popcorn
1/2-1 c peanuts (optional)
3/4 c sugar
1/4 c corn syrup
1/4 c cocoa powder
1/2 c butter
1 t vanilla

Directions:
Preheat oven to 250 degrees F. Oil a 10x15 inch baking pan with sides

Place popcorn and peanuts on baking sheet and set aside.

Stir together the sugar, corn syrup, cocoa powder, and butter in a saucepan over medium-high heat until it comes to a full boil. Boil for 2 minutes. Stir in the vanilla and pour over the popcorn. Stir until the popcorn is well coated. Spread evenly in pan.

Bake in oven for 30 minutes, stirring every 10 mintes.

Remove from the oven and allow to cool to room temperatures. Store in an airtight container or eat it all in one sitting. Enjoy!!!

Cinnamon-y Popcorn


Looking for something different from the usual Caramel Corn? This is a totally scrumptious alternative- crunchy, sweet, and cinnamon-y goodness. You really can't go wrong!

Ingredients:
3 quarts popped popcorn
1/2 cup butter or margarine
2/3 cup sugar
1 T cinnamon

Directions:
Measure popcorn on a large jelly roll sheet

In a microwave-safe bowl, combine the butter, sugar, and cinnamon. Microwave on high for 1 minute; stir. Microwave 1 minute longer or until the butter is melted; stir. When well blended, pour over popcorn and toss to coat.

Bake, uncovered, at 300 degrees F for 10 minutes. Cool. Store in an airtight container; or just eat it!

Also try melting some white chocolate baking chips and drizzle over the cooled popcorn. Delicious!!!

Night At The Drive-In Invite Ideas

Ok, so it may not be the norm to ask somebody out on a date using an invite, but you bought a date box because you wanted something different, right? Everybody likes to feel that they're being spoiled with romantic thoughts and gestures, and an invitation to differentiate this date from just another hang-out session is just the way to start! Here are some fun ideas of ways you can ask your date that will surprise and intrigue them. (So what are we going to do on our date, honey?) Bonus points if you mail them. Your date will be surprised when they find a spoon with an invitation on it, but if it comes in the mail you'll never hear the end of it! (In a good way!)

Here are some great ideas to get you inspired! Don't forget to include the date, time, location, and any other pertinent details (like if pajamas are recommended!)
  • Box of candy with invite inside and address taped to the outside. (Whoppers, Junior Mints, Mike n' Ikes). You can even break up the invite into a few different parts and put each part inside a different box of candy
  • Movie rental gift card inside an envelope with invite

  • Make a mock ticket that has the invite details on the front
  • Ikea model mannequin spray painted gold and the address on the bottom platform (like the oscars guy)
  • Bag of glow in the dark stars and message written on them (join me for a night with the stars)
  • Unpopped bag of popcorn with invite written on the packaging
  • Empty tub of butter with the invite inside and the address on top
  • Popcorn box filled with popcorn and a paper invitation inside

The Best Caramel Corn You'll Ever Make (and the easiest, too!)

If you are a caramel corn junkie, then this is the recipe for you- it's so ridiculously easy, amazingly delicious, and it takes no time at all! You'll be sure to impress your date with your mad (microwave) cooking skills. If you can push buttons and do a little shaky shake with those buff arms of yours, then you have what it takes to make this recipe. So hop to it! You won't regret it for a second... at least until you realize that you ate the entire thing in a matter of minutes... and your date hasn't even arrived yet!

Ingredients:

12 c popped popcorn (about 1/2 c unpopped kernels)
1 c brown sugar
1/2 c salted butter
1/4 c light corn syrup
1/2 teaspoon salt
1 t vanilla
1/2 t baking soda

Directions:


Pop the popcorn and place the appropriate amount into a large brown paper bag. A grocery bag works perfectly. Try to get out any unpopped kernels- they are tooth breakers and detract from the 'inhalation of food' process. Set aside.

In a 2 quart heat-proof, microwave-safe dish, combine the brown sugar, butter, corn syrup, salt and vanilla. Heat for 2 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and stir in the baking soda. Watch it all get foamy and awesome! Stir thoroughly to make sure it is well blended.

Pour syrup over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the popcorn. If you get a saturated clump of popcorn in the middle, you can do a little stir in the bag with a nonstick utensil (I used a big spatula) to break it up so that the caramel disperses and coats everything evenly.

Place bag into the microwave and cook for 1 minute. Remove, shake, flip the bag over, and return it to the microwave. Cook again for 1 minute. Dump the popcorn out onto waxed paper, and let it cool until the coating is set. It doesn't take long, but don't jump the gun! Caramel is very hot when it is straight out of the microwave and it sticks like crazy, which is a really bad combo. Don't ask me how I know!

Once it gets cool enough to touch (again, be careful about poking at it too early with your fingers!) you're good to start inhaling it. Or if your date hasn't arrived yet, put it somewhere you can't reach it. Or you'll eat it. All. Before they arrive. Bad news, sad date.
